Sometimes, nothing can hit the spot like Chinese food. But if you’re like me, when a Chinese food night comes along, you eat way too much and end up feelings pretty gross. I created this recipe to satiate that craving in a healthier way.
2 cups quinoa, cooked
2 eggs
1/2 cup frozen peas
1/2 cup frozen spinach or kale
2 cloves garlic, minced
1 teaspoon grated ginger
2-3 scallions, chopped
coconut oil
1 tablespoon Nama Shoyu
Begin by cooking your quinoa (usually quinoa to water ratio is 1:2 with a little sea salt and olive oil, bring to a boil, cover and simmer for 15 minutes, and then let sit for 5 minutes covered, off of heat).
After your quinoa is cooked, heat some coconut oil in a pan and scramble your eggs. Once cooked, remove eggs from pan, add a little more oil if needed, and sauté the garlic and ginger.
After about 2 minutes, add the eggs, quinoa, scallions and peas into the pan and mix everything together, cooking until peas are defrosted and everything is heated through. Mix in the Nama Shoyu and enjoy!!
