One of the things that I use most in my kitchen is salad dressing. Fact; I eat a lot of salads, which means, I also eat a lot of salad dressing. I have experimented with a bunch of different flavors, ingredients and recipes, and this one remains my fav.
You will need:
Some of my favorite greens covered with this simple, zesty dressing.
1/2 cup olive oil
1/2 cup apple cider vinegar
1 tablespoon raw honey
1 tablespoon dijon mustard
1-2 cloves of garlic (depending how much kick and zest you want)
Juice from 1/2 a lemon
Salt and pepper
Put all of the ingredients in your blender and blend until smooth. Dump on top of your favorite greens, or keep in a jar in the fridge until you are ready to enjoy. This is guilt free dressing. The ingredients are not only guilt free, but most of them are actually beneficial and medicinal to our bodies!
Some other fun ingredients to try are:
Kelp granules
Miso paste (1 tablespoon)
Chick peas (cooked, 1/2 cup, this makes the dressing more creamy)
Fresh herbs
Salad dressings can be a scary thing. Store bought dressings contain unnecessary sugars, all kinds of preservatives, and all sorts of things that we don’t want to be fueling our beautiful bodies with. Make a big batch of this by doubling the recipe and it will stay good in your fridge for a week or more.
Enjoy!
with love and healthy dressings,
Amanda
